Introduction :
“Hiirazu” is the only Pure Rice Daiginjo Sake produced in Kokuryu. It is a reserved production item. Its tonality is quite plump, and it is a sake of very high standard among the raw sakes. Its fruity scent is full of pear, melon, apple pit and other scents, which is not greasy but elegant. The taste is quite brisk. Gently sliding down the throat, the sake leaves a hint of melon fruit. When paired with light dishes, it is definitely a great pleasure in summer.
