The sake rice of ” Juyondai Limited Brewing Sake Jumaidaiginjo ” is product developed over 15 years. It is a blend of “Dewa no sato (mother)” and “Kura no hana (father) “. What’s interesting is that Yamada Nishiki is its “grandfather”. The difference between this sake rice and the other produced in Yamagata Prefecture is the discovery rate of “Shinbakku” (the white part in the middle of the rice) is larger, the harvest rate is higher, and the protein content is low. It is suitable for brewing. Other sake made with ” Yukimegami ” sake rice have also won gold awards from Japan’s National New Sake Appraisal Committee in past years. The Juyondai series that has won gold awards for 8 consecutive years is expected to be awarded this year again.
