Introduction :
Hitakami Jumaidaiginjo Yasuke is made using Yamada Nishiki from the most famous production area – “Matsuzawa District, Tojo Machi, Hyogo Prefecture”. Yamada Nishiki has characteristics such as elegance and fragrance, and this even made Yasuke the pinnacle. This product was named “Yasuke” which can be traced back to Meiji era. At that time, Geisha called sushi “Yasuke.” There was a Kabuki performance called “Yoshii Senbon Sakura”. Tara no Koremori, the grandson of Taira no Kiyomori , who was defeated in the Battle of Genpei, took refuge in a sushi restaurant in order to escape. He called himself “Yasuke”. That’s why later generations of Kabuki would call sushi “Yasuke.”
